I believe that if they've not read it you can delete it from yoru Sent and they will then not see it. The whole thread gets deleted.

THIS IS INCORRECT.

You can only delete messages in your own inbox/outbox.

Nothing stops a message you sent from being recieved.

I always delete my threads. I send messages then delete them all the time. The person replies as normal

No you cannot unsend or delete messages from someone else's inbox, only your own.

Even if you block them, they still have the messages you sent, and can still open unread messages you sent before you blocked them
