Can't remember the last time I had steak. Could be 20+ years ago. Don't eat out and tend not to cook such luxuries for myself. I would guess I would go for medium rare.

As for cock well its got to be raw in the mouth but prefer it in a rubber suit in the arse for hygiene reasons.

I prefer mine well done,I usually Cook it in butter with a little olive oil then when steak to my liking remove from skillet to rest a few mins, add some cream and pepper to pan juices, stir and pour over meat

Yes a really hot smoking pan. Many ceramic hobs can't provide enough grunt. I use a camping stove for real flame.

It depends on the steak, not all cuts get cooked the same way are we talking Fillet, ribeye, sirloin, T bone, tomahawk, minute, flank, piranha, flat iron, hanger, New York strip… not all steaks come out well cooked blue/rare some need longer to properly melt the fat.

Personally I take my steak as rare as it takes to properly cook it

Agree… problem is pub steaks tend to be cheap (relatively for a steak) - but poor quality. Usually it is better to order the burger! Better value for money and less likely to disappoint.

But then you get the “trying to be posh” places that you assume know how to cook a steak. In a way, they’re worse, as they charge twice / three times the pub price, but are not much better than the pub. Very underwhelming / poor value.
