Mayo is just poncey and too continental, ketchup is sweet and sickly. For me it's salt & vinegar, although sometimes I'll have the Scottish style chippy sauce, with salt, which I make by adding vinegar to the last inch of brown sauce in the bottle.

With you all the way on that. Garlic mayo was mega popular in Ireland when I lived there and is great on just chips. But as you say, ketchup with a fish and chips dinner, and it has to be HP if chips with burgers or a full Irish breakfast (which is a full English with more bacon and sausages, black and white puddings, and of course chips)
