I don't really get why people do this. Chalk it up to experience and forget about them.

One exception would be if you encounter somebody who's definitely predatory or nasty, hiding behind a safe looking profile.

Completely agree with this. A bit of honesty would earn far more respect than a vanishing act. Not much point in naming mine because they seem to delete their profiles minutes after arranging to meet.
