Yes agree while they can vary widely in taste they all taste similar

Smoking, coffee and alcohol can lend a bitter note (mostly due to dehydration)

Whilst a fruit high diet make it sweeter (due to being hydrated)

Generally speaking a guy with a healthy diet and lifestyle will have better tasting cum (smoother, milder and sweeter) than a chain smoking alcoholic who gets through life on black coffee and (whose cum may be more bitter/acrid)

Also how fresh it is affects it, and if he passes any urine with it - lots of factors.

I find smoker’s taste horrible that’s why I try to avoid them.

If his cock is in your mouth the risk threshold has already been passed whether he cums in your mouth or not. Ive sucked thousands and a fair few of them cum in my mouth or arse, I've never had an STI. The risk is slim but never zero. Regular testing should be a way of life for anyone having random sexual encounters.

It's not just cum that could pass the STI to you. There is a risk with oral or really any sex or close contact for various infections. Someone cumming in your mouth is not going to make things worse in that respect. The only safe sex is no sex I'm afraid.

Taste your own and experiment with diet. I tried that and didn't notice any great difference and neither did the Mrs. Timing made quite a bit of difference. After three days things got lumpy and salty compared to the the sixth load of the day, which was sweet and basically precum. Who said science wasn't fun?
